@EnTerbury: Yes, for current drivers, the convention is to only list the current team (or the team(s) for the previous and next seasons if we're between seasons as we are now); for drivers who have retired, all teams are listed - see Template:Infobox F1 driver. @DH85868993 was there a discussion somewhere? it seems very arbitrary.

looking around a few articles, the infoboxes are anything but concise. they all include information that on their own would be completely unnotable. literally half of it could go immediately. i would argue that former teams are one of the most important pieces of information about a formula one racing driver in an encyclopedia article. thats what infoboxes are for in the first place.

@EnTerbury: I don't remember there being a discussion, but this is the convention which has evolved over time. You're more than welcome to start a discussion about the infobox contents at Template talk:Infobox F1 driver (it probably makes more sense to have a discussion there rather than on the talk page of an individual driver's article).
