This mixture is sprayed onto a baking tray and flattened, then baked in an oven. Instead of almonds, the kernels of apricot pits are sometimes used as a cheap alternative.

In Italy, there is a similar biscuit called amaretto, which is made with sweet almonds. It is brittle cookie, while the variety in the Netherlands is known for its chewiness.
