Burdock & Co. is a farm-to-table restaurant located in the Mount Pleasant neighbourhood of Vancouver, British Columbia, Canada. It was opened in April 2013 by chef and owner Andrea Carlson.[1] The restaurant is recognized for its use of local, organic, and seasonal ingredients, and is guided by a philosophy rooted in the 100-mile diet.[1][2] In October 2022, Burdock & Co. was awarded a Michelin Star, making Carlson the first female chef-owner in Canada to receive the distinction.[2]

History and philosophy
Burdock & Co. was opened in 2013 by Andrea Carlson, who had previously served as the executive chef at Bishop's Restaurant in Vancouver for five years.[1] Carlson is recognized as a pioneer of the locavore movement in Vancouver, having created Canada's first 100-mile tasting menu at Raincity Grill in 2006.[2]
The restaurant's tasting menu changes approximately six times per year, timed to coincide with the full moon phases, which Carlson regards as traditional markers for seasonal transitions, planting, harvesting, and foraging.[3][4] The restaurant was among the first in Western Canada to feature an all-natural wine list.[1]
Taste Sound dinner series
In a notable creative venture, Carlson developed an immersive dinner series called Taste Sound in collaboration with electronic musician and biologist Tarun Nayar. At these events, diners wear headphones and listen to recordings of the bioelectric energy emitted by the plant-based ingredients in their food.[3][4]
Recognition
Burdock & Co. received a Michelin Star in October 2022, when the Michelin Guide published its inaugural Vancouver edition.[5] Carlson was the first female chef-owner in Canada to earn the distinction, and the restaurant has maintained its one-star rating since.[2]

Related ventures
Carlson also owns Harvest Community Foods, a local grocer and noodle café, and Bar Gobo, a wine and hi-fi bar, both located in Vancouver.[2] Bar Gobo features a custom sound system and holds a Michelin-recommended designation.
In 2019, Carlson co-authored a cookbook titled Burdock & Co: Poetic Recipes Inspired by Ocean, Land & Air, exploring the restaurant's culinary approach and ethos.[6]
