The 1907 Cork Senior Hurling Championship was the 20th staging of the Cork Senior Hurling Championship since its establishment by the Cork County Board in 1887.

St. Finbarr's were the defending champions.
Dungourney won the championship following a 5â17 to 0â3 defeat of Castletownroche in the final.[1] This was their second championship title overall and their first title in five championship seasons.
