Frgál (plural: frgály, frgále) is a traditional Czech sweet pastry originating from the Moravian Wallachia region (Valašsko) in the eastern part of the Czech Republic. It is a type of large, round koláč made from yeast dough and typically filled with a single variety of sweet filling, such as fruit, poppy seeds, or tvorog.

Etymology

The term frgál is derived from a regional dialect word that originally referred to a “spoiled” or “unsuccessful” cake[1][2]. Over time, the meaning shifted, and the name came to denote a distinctive local pastry rather than a failed baked good.

History

The earliest documented references to frgál date back to the early 19th century, with written mentions appearing around 1826[3]. The pastry developed as part of rural culinary traditions in Moravian Wallachia and was commonly prepared for festive occasions, including weddings, religious holidays, and community celebrations.

In the past, savory versions of frgáls were also baked, filled with sauerkraut or beets, but these are rarely found today.

The pastry is considered a regional specialty and in 2013, it has been granted protected status within the European Union[4].

Description

Frgál is characterized by its large, flat, circular shape, often measuring approximately 25–30 cm in diameter. It is made from enriched yeast dough and is notable for its relatively thin base and generous layer of filling. A crumb topping (streusel) is commonly added before baking. After baking, the pastry is traditionally brushed with melted butter and rum-flavored spirit, which enhances its flavor and gives the surface a glossy finish.

A defining feature of traditional frgál is that each pastry contains only one type of filling, in contrast to some other Central European pastries that combine multiple fillings.
