Levan Kokiashvili is a Georgian gastronomy and hospitality consultant, Restaurateur, researcher, and entrepreneur. He is the founder of Gastronaut and a certified WSET Level II sommelier.[1] Kokiashvili is best known for his research on Georgian culinary heritage, particularly for leading the project that resulted in the tradition of Khachapuri being granted the status of Intangible Cultural Heritage of Georgia in 2019.[2] During this extensive research, his team documented 53 distinct varieties of the traditional cheese bread across the country.[3] Following his research, Kokiashvili co-founded "Gunda," the first artisan khachapuri bakery in Tbilisi, which focuses on reviving and preserving authentic regional varieties of the dish.[4]

Career

With over 23 years of experience in the hospitality industry, Kokiashvili has managed international projects with various gastronomy-oriented brands.[5] He is a regular contributor and gastronomy columnist for the Georgian edition of Forbes.[6] In 2019, Kokiashvili was recognized in the list of "The Most Daring Entrepreneurs" by the Georgian issue of Entrepreneur magazine.[7]

Through his consulting agency, Gastronaut, Kokiashvili aims to popularize Georgian gastronomy on a global scale and develop innovative retail and modern store concepts.[8][9] He actively advocates for sustainable practices in the hospitality sector and raises awareness about global food waste issues.[10]
