Zymase

Zymase (also known as alcoholase) is an obsolete term[1] for an enzyme complex that catalyzes the fermentation of sugar into ethanol and carbon dioxide.[2][3] It occurs naturally in yeasts.[4] Zymase activity varies among yeast strains.[5]

Zymase is also the brand name of the drug pancrelipase.[6]
