Armenian salad (Armenian: հայկական աղցան), also known as summer salad (Armenian: ամառային աղցան) and cucumber and tomato salad (Armenian: վարունգով և լոլիկով աղցան), is a traditional Armenian salad. It is one of the most popular Armenian salads today.[1]

In the Armenian language, the word aghtsan means "salad"; however, the word salat‘ is also widely used.[1]
Preparation
The Soviet book Armenian Culinary published in 1960 provides the following recipe. Fresh cucumbers and tomatoes are washed, sliced into thin rounds, and arranged on a serving plate in alternating rows. One cucumber is scored lengthwise into four sections and placed in the center of the salad. Decorative bell-shaped garnishes made from thinly sliced cucumber are fitted onto the tops of the cucumber sections. The salad is seasoned with salt, and a small amount of pepper is placed inside the cucumber "bells." Finally, the salad is garnished with fresh parsley and basil, arranged to give the cucumber bells the appearance of small bouquets.[2]
